Local Valle Camonica salami is obtained with noble parts of the pig. It is obtained by grinding the thigh, the back, the bacon and the cheek lard, all these parts are deprived from all those ribs that could be bothersome while eating it. Afterhaving ground lean and fat parts in percentage of 70% lean and 30 % fat, we add salt, spices, garlic and red wine, mixing everything until it is smooth. After mixed, the filling is stuffed into natural pig guts, hand-tied with hemp twine, then hung in special cells, in order to let it dry. This process takes approximately seven days, after which, the salami is put in a cell with temperature and humidity controls, in order to obtain a seasoned product. The seasoning varies depending on the sizes and the client's need, at least 45 days.
