Goat salami: Our goat salami is made by mixing two different types of meat, lean meat goat that you take only from the thighs and pork bacon. After selecting the meat, all is ground in 6mm, adding salt, spices, garlic and a good red wine. We mix together until is smooth. After it is stuffed into natural casings, tied by hand, and then hung in order to let it dry. The drying process occurs at temperatures and humidity controlled in cycles that last for seven days. After this stage the product is left to mature for a minimum of forty days. With this salami, I would drink a very cold double malt beer or a good full-bodied red wine.
