Vallecamonica's bacon: The Bacon is the part of the pig's belly, a part that is formed by 70% of meat and 30% of fat. Once separated from the rest of the pork, removing the rind, it is put in plastic tubs for food use, sprinkled with a tanning made with salt, spices and garlic and left for ten days in order to season. One day and one not, bellies are turned over, the ones above are put under so that the salt can be absorbed over the entire surface of the product. After having done this, a few hours before tying and bagging, the bacon is pulped with white wine, you can also use red wine but this might give the meat a wine-colored look. After this process the bacon is rolled and tied, after which, it is inserted in a very narrow alley and bound with string or elastic cord, then hung in the drying cells and let seasoning with fresh air and low humidity.
