Sopressa Vallecamonica is achieved with the noble parts of the pork. It is obtained by grinding the thigh, loin and bacon, all these parts are deprived from all those ribs that could be bothersome when eating.After having ground lean and fat parts in percentages of 70% lean and 30 % fat, we add to the pork and bacon cubes diced tenderloin and then we add the mixture of salt, spices, garlic and red wine, then the whole is mixed until the dough is smooth.The filling is packed in natural bladder which will give the round shape. After being tied by hand with hemp twine, it is hung in special drying cells, the process takes approximately seven days, after which, it is put in a cell with controlled temperature and humidity in order to obtain a seasoned product. The seasoning varies depending on the sizes and customer's need, minimum 60/90 days.
