Mutton sausage with beef. This is one of the most important products of Valle Camonica. We can find this mutton sausage in two different ways: the original one, made with sheep meat only, and the other one made with sheep meat 70% and beef 30%. This is similar to a wurstel, finely ground and mixed with sheep meat broth, in order to obtain a soft and creamy mixture. It stuffed into natural casings with a weight of about 700 gr. The cooking takes place after having boiled this mixture for about 10-15 minutes. Once it is cooked you can match with a good polenta and peppers, or with mashed potatoes and spinach mixed with butter. A good red wine would be ideal with this meal. Enjoy your meal….
