Sopressa to cook is a little different from the seasoned one, because the composition is different. In the soppressa to cook we use the most mixed parts because in the cooking process the meat should not remain dry but soft and warm, so we use the shoulders, bellies and the head's meat.Once prepared the meat the proportions between lean and fat vary, then they are quite finely chopped, about 6 mm, after which we add a pinch of salt, spices, garlic and red wine and small cubes of bacon and pork tongue all packed into natural blisters.Sopressa is cooked by soaking it in plenty of cold water in a large pot, when it starts boiling, it lowers the fire and let cook for about two hours. Once cooked, it is cut into slices and served with buttered spinach, mashed potatoes or polenta. Red wine is a must. Enjoy your meal.
