Detailed information: horseshoe-shaped salami 100% pork


Our cooking salami is realized mixing lean pork meat and shoulder, head and bacon. After having ground them at a 6mm size, the mixture is covered in a dressing made of salt, spices, garlic and red wine, everything is mixed in order to let the meat incorporate the dressing, after this process it is bagged in natural gut that can be made of bovine or pork. Next it is tied and hung in order to let it dry at 20°, in order to let the mixture give flavour, our salami is ready to cook now. The cooking process is made in a big pot, not too little because the salami needs a lot of water and space, otherwise it will break. Then we put our salami in cold water, when it starts boiling we lower the gas and we let it cook for about 40/60 minutes, this time for a 800 gr. Salami, a little bit more for 1kg or more salami. How can we eat it? I suggest eating it with spinach made with butter and potatoes purée, or with polenta and cheese, and a glass of wine, not too full-bodied. An advice: if you have some leftovers don't throw them away, you can eat them also the day after, how? You can make an hamburger with polenta, put a slice of salami on the polenta and a slice of semi-matured mountain cheese, turn the oven on at 180°, put the hamburger in the oven, when you see the cheese melt, remove it from the oven and.. enjoy your meal
