The salty meat is not a sausage but as its name says, is a cooked meat. It can be made with beef or horse meat. Our salted Meat is made with beef.We take pieces of meat that weigh about 1-2 kg, as neck, shoulder, muscle, etc, they are put in plastic tanks for food use with a salt made of tanning , spices and herbs. We let them soak for about a week, being careful to keep it shot through the top and bottom.The meat is cooked by boiling or steaming. After cooking, the most beautiful pieces are cooled in a scrubber and the parts that tend to open are put into molds and pressed, giving the shape of the chosen mold. Even the latter will be placed in removal to cool the meat. How do you eat it?The salted meat is good in a sandwich or as the tradition, you cut the end into stripes, seasoned as a salad with Extra Virgin Olive Oil, onions, celery and beans.
